The Scotch bonnet chilli is a small, lantern-shaped chilli pepper famous for its intense heat and distinctly fruity, tropical flavour. It is a staple in Caribbean cuisine, especially in dishes from Jamaica, Trinidad and Tobago, and the wider West Indies.

 

In terms of heat, Scotch bonnets typically range from about 100,000 to 350,000 Scoville Heat Units (SHU), putting them in the same general category as the habanero. The heat is sharp and fast, but what makes it especially valued in cooking is that it also carries a sweet, almost mango or apricot-like aroma underneath the fire.

 

The peppers usually ripen from green to bright red, yellow, or even orange depending on the variety. They’re commonly used whole in stews, sauces, and marinades to infuse flavour, or finely chopped in hot sauces like Jamaican jerk seasoning.

 

Compared to similar super-hot chillies, the Scotch bonnet is less about pure burn and more about a balance of heat and rich, fruity depth are one reason it’s considered essential in Caribbean cooking rather than just a heat source.
