Manzano yellow chilli is a striking yellow form of the rocotto pepper species, known for its apple-like shape and thick, juicy walls. “Manzano” actually means apple in Spanish, which fits the fruit’s rounded, slightly squat appearance and crisp texture when cut open.

 

This chilli belongs to the species Capsicum pubescens, which sets it apart from most other hot peppers: the seeds are typically dark/black, the plants have fuzzy (pubescent) leaves, and the fruits are notably more fleshy than typical thin-walled chillies. The yellow variety ripens from green to a bright golden-yellow, sometimes with a slightly waxy sheen.

 

In terms of heat, it usually sits in a medium-hot to hot range for chillies, often noticeably punchy but not in the extreme “superhot” category. The heat is generally slow-building and paired with a fruity, slightly floral flavour that can have hints of apple or pear-like sweetness underneath the spice.

 

Culinary, Manzano yellow chillies are popular in Andean and Latin American cooking, especially for salsas, stuffing, and fresh sauces. Because of their thick walls and juicy bite, they also hold up well when roasted or cooked, making them more versatile than many thinner chillies.
